香港开了41年的越南餐厅，之前在南山开了1家店，现在从南山搬走了...

 水果汤粉 

整颗菠萝熬汤底



这一碗就是很多女生都喜欢吃的番茄蟹肉汤檬粉。





番茄炒香，加入鸡高汤，再放入两个完整的大菠萝，让菠萝和番茄的酸和甜都融到鸡汤里。



汤喝起来酸甜开胃，还带着点水果的香气，对于夏天来说，挺开胃的。（注：菠萝只用来熬汤底，汤粉里没有菠萝块）

 夏日凉拌粉 

自家熬制45度辣椒鱼露



【香茅鸡扒捞檬】凉凉的捞檬，配上自家熬制的酸辣鱼露酱，很多越南人夏天都喜欢在街头来上这么一碗凉拌粉消暑。





用的是越南檬粉，米浆味更浓，更好吸满汤汁。







而拌粉的鱼露酱，是店里每天现做的，打辣椒、打蒜泥，加入45度的鱼露和调料慢慢熬，冷却后装瓶现用，可以说是捞檬的关键味道了。（鱼露也按浓度划分，不同度数的鱼露吃法不同）

①卖了41年的粉



这碗牛肉粉，开在香港的店已经卖了41个年头了，是很多当地人都会去吃的【老赵越南餐厅】。

②100斤牛肉熬汤底





不变的是牛肉高汤依旧是用100多斤的牛腩和牛筋、牛骨、萝卜、药材包一起炖，炖汤锅比人高。

③喝汤吃肉再嗦粉



所以，这碗粉拿到后，记得先喝口汤，吃完肉，然后就嗦粉。我喜欢一口粉配一口汤，最后粉没了汤也刚好喝完。

 还有很多越南菜 

①紫苏牛肉卷



牛肉用紫苏叶裹得实实的，保证咬下去每一口都有紫苏和牛肉的味道。



包上脆爽的生菜、米粉、薄荷叶、金不换、淋上一点鱼露，咬下去满是夏天的味道。

②冬阴功炒饭





冬阴功炒饭你吃过吗？米饭炒得粒粒分明，却又带着冬阴功的酸辣味和海鲜，让人不小心又多吃一碗。

③烧鸡



烧鸡配的酱汁也跟其他都不一样，绿绿的样子，你能猜到是加入了什么吗？

④墨鱼腐竹卷





这个墨鱼丸一定要蘸上现调的清爽酱汁，咬开炸得脆脆的腐竹皮，里面就是白白嫩嫩的墨鱼肉。

⑤青柠蒸鲈鱼





青柠蒸鱼是很多人都会点的，海鲈鱼的鲜嫩和青柠的酸，在咕嘟嘟的小火里越煮越融合。

⑥三色胡椒炒猪颈肉





这道菜一直卖得很好，3种不一样的辣椒，快火炒上脆爽的猪颈肉，吃起来微辣弹牙，很下饭。

⑦咖喱龙虾





比起一般的咖喱虾，咖喱龙虾气势上更霸道一些，整整一只波士顿龙虾被埋在浓稠的咖喱酱下。



无论是用蒜香法棍蘸汁吃，还是直接拿来捞饭，都有点让人停不下来。

 搬到了宝安 



这家店南山开了一年多，现在搬到大宝安了。





店里的装修还是那么透亮，那么悠哉，越南的元素也悄悄化成竹子栅栏、竹编墙饰和头顶的吊灯。



在这里下午茶的时候，来个斑斓布丁。
