CANTINA BASSOLI

We have cultivated our vineyard since 1922, in the northwest territories, in Carpi,where the country side borders the city. The grapes are then hand picked and undergovinification in wooden barrels. Our passion for wine making has been past on from father to son. In order to protect the environment we take care of our heritage. New manufacturing techniques preserve our knowledge and traditions. We patiently awaite very year for the fruits of our land to obtain a wine in which our history is enclosed.

Our traditions have become the keystone of an entrepreneurial venture. The Bassoli family has expanded through the years but our passion and conviction hasn’t altered. After the earthquake hit the Emilia region in 2012, our company’s new management decided to replace the old system and equip the winery with high-tech new ones, that have been adapted to our traditional methods: the long experience of our winemakers represent the pride and the success of winery. Today our winery wants to create new traditions to pass down to future generations to re-enforce the thread that binds us all.

CANALE DEI MULINI

Canale dei Mulini is a wine born from selected grapes of the Bassoli vineyard, and is a tribute to our land of Emilia. The irrigation systems trace paths through our territory, draws geometries on the lands, circumscribes and simultaneously sews our rural fabric. Canale dei Mulini was one little canal that together with others passed through our city before coming out into the countryside. Today many of these canals flow underground, but even if they are no longer visible they bring lifeblood to our vineyards.

Organoleptic description: The characteristics of this wine are its intensity and freshness: cold maceration and fermentation at controlled temperature give it an intense red foam and pleasant fragrance.

Sensory profile appearance: Ruby red with intenseviolet hues.

Palate: It has a fairly simple taste, much sweeter than most red wines, medium body. .

Food matches: It goes very well with the typical food from Emilia Romagna like zampone or cotechino, and it’s even used to makerisotto or pasta with Lambrusco.

Organoleptic description: The pressing and brief maceration of selected grapes is followed by the fermentation of the must at controlled temperature; a second fermentation imparts  the characteristic sparkling note.

Sensory profile appearance: Lively red with violetreflections.

Palate: Fruity, soft and harmonious, it tastes light and well-balanced.

Food matches: This lambrusco is perfect for every occasion, enjoyable and straight forward, its easy drink ability makes it a favoutrte with italian handmade pasta like tortellini,tagliatelle or red meat.

Organoleptic description: The grapes are harvestedand selected by hand, then they are subjected to a gentle pressing in order toextract the must alone, which is then placed to ferment at controlled temperature; after that the wine is produced with Charmat method without goingthrough a secondary fermentation in the bottle.

Sensory profile appearance: Color pink, intenseappeal of flowers and berries.

Palate: Fresh, good structure and persistence on thepalate with soft foam end.

Food matches: Great with different kind of food, bestwith meat, vegetables, strong and elaborate dishes like polenta.

Organoleptic description: This lambrusco is made with the best wine-making techniques and the classic combination of Sorbara and Salamino grapes. It is produced from the soft pressing of the grapes and acontrolled temperature maceration.

Palate: Sweet and refreshing fruity flavour, anintense hint of bouquet and berries, light and delicate; best to serve chilled.

Organoleptic description: This sparkling wine comes from the more scrupulous selection of 100% Pinot Noir grapes vinified in white.After pressing, the must is placed in an autoclave where it is cooled to 10° C and where are inoculated the yeasts for fermentation with Charmat method. The wort is periodically micro oxygenated to prevent reductions. The temperature is constantly monitored to get intense and fruity aromas and to ensure the fineperlage.

Sensory profile appearance: White paper, clear and Fine perlage.

Palate: Intense, pleasantly fresh to the palate dryand soft, Aromas of citrus, berries,tropical fruits

The greek word “Etimo” means “true, real, genuine” and reminds us of an origin. This is the beginning of a story we want to tell. The still wines selected by the Bassoli vineyard have so much more to tell: with these wines we want to reach high peaks of excellence. This selection is able to offer wines that are pleasant and not overwhelming.

Organoleptic description: Temperature controlled maceration with regular pumpings over. Skin contact lasts around 10 days aimingto achieve an optimum extraction of colour, flavours and tannins. Subsequent malolactic fermentation in stainless still tanks.

Sensory profile appearance: Ruby red with intense violethues.

Palate:  Strong and rich typical aromas ofblackberries, raspberries and ripe cherries, amouthfilling elegant character with excellent balance.

Food matches: A great wine for pastas with meat ortomato-based sauces, it is also good soft or hard cheese. Best to drink after afew minutes in a decanter.

Technical Alcohol: 12,5%

Organoleptic description: This white still wine showsits best with low fermentation temperatures that help the variety express in its aromas. The Ortrugo grape (wine grape variety grown in the Piacenza hills)is blended with the Riesling Italico. The mixture of musts occurs when the Riesling has reached full ripeness while Ortrugo must retain high acidity to give freshness and fragrance of the wine.

Sensory profile appearance: The wine has lovely paleyellow color with greenish tinges.

Palate: This is a tasty, crisp wine, brimming withapple, pear and citrus fruit flavors.

Food matches: A good choice for fish (even salmon)and chicken dishes.
